I absolutely loved this dish at Olive Garden, Then they took it away, So sad! I have searched and tried many online. I have changed and added until I came up with what I thought is a close carbon copy of the Original. Tho, The authentic Italian dish would call for Pancetta, I found that after trying both, I just like the Bacon flavor better.. I guess that's the Mountain Chick in me. Grocery List

 2 lbs Chicken Breast

1 lb Raw Peeled Shrimp

 1/2 Cup Hot Water

 1/2 Olive Oil

 1/4 Tsp Italian Seasoning

1 lb Bacon

 Save Bacon Grease For Chicken

 16 oz Package Linguine

 1/2 Cup Romano

 1/2 cup Parmesan

1/2 Cup Mozzarella

 1/2 Cup Red Pepper

 2 Cloves Garlic

 2 tbsp Fresh Parsley

 1 Stick Butter

 2 cups Milk

2 cups Heavy Cream

 1/4 tsp Salt

1/4 tsp Pepper

Preheat Oven 350

 Serves 8

 Prep Time - 30 minutes

 Cook time 35 Minutes



 2lbs Chicken Breast
1lb

 1/2 Cup Hot Water

 1/2 Olive Oil

 1/4 Tsp Italian Seasoning
Cut Chicken into Strips and Marinade in all the above in the Fridge for approx 30 mins



 Separate Dish - Season Shrimp with 1/4 tsp Garlic Salt & 1/4 tsp Italian Seasoning 2 tbs Olive Oil or Bacon Grease

 16 oz Package Linguine
Boil Water for Pasta

 1 lb Bacon for Bits
Save Bacon Grease For Chicken
Cook and Drain pan, Leave enough to cover pan and Fry Chicken. You can even use the grease to saute the Peppers and Garlic.

 Bread Chicken with Panko Bread Crumbs and Fry till done in saved Bacon Grease.
Some people choose to not bread the Chicken. Totally optional.

 Chop & Prepare the Pepper, Garlic, and Parsley, You can Shred your Cheese now too..

1/2 Cup Red Pepper

2 Cloves Garlic

 2 tbsp Fresh Parsley

 Add 2 tsp of Butter or bacon Grease to Sauce Pan, then Saute Peppers, Garlic & Bacon Bits together till roasted

 Now..Add
1 Stick Butter till Melted then add


1/2 Cup Romano

 1/2 cup Parmesan

1/2 Cup Mozzarella

 2 cups Milk

2 cups Heavy Cream

 1/4 tsp Salt

1/4 tsp Pepper



Saute Shrimp in pan alone

Boil till Creamy saucy consistency approx 10 Minutes, Stir Often and enjoy the aroma! Once done ... Add Cooked Chicken and Shrimp. Simmer about 5 minutes. Drain Pasta and place in a 13x9 Pyrex Dish and Cover with Carbonara Meats & Sauce.
Cover with Panko Breadcrumbs and More Cheese
Bake at 350 for 15 minutes
Serve with a Greek Salad and Bread Sticks
Wine - A Refreshing Pinot Grigio or an unoaked Gavi di Gavi from Italy. I always like a good Roscato or Moscato or A White Moscato also pairs well.
